I recently received the 5-Ingredient Instant Pot Cookbook, which works out perfect, since my significant other bought me an instant pot for my birthday. I’ve been trying out these recipes, and they are perfect every time. There are 150 Easy, Quick & Delicious recipes including in the book.
My family loves when I cook out of the book, because the meals are moist, delicious, and take no time to make. Even Sarah, my 21 year old, has cooked out of the book, and I don’t normally let her touch my kitchen accessories, but I want her to get used to the Instant Pot, since she’ll be getting one soon.

First of all, I never knew there were so many recipes for the Air Fryer. I love everything I’ve made, to this point. And, I plan on making a lot more. Did you know, for instance, that you can put a potato in the air fryer? I didn’t know it! But 5 Ingredient Fryer Recipes has taught me a lot.
If I’m being totally honest, I never put oil, of any kind, in my air fryer. I do every recipe without it. I know this may sound weird, but it’s supposed to be air frying, not deep frying. I’ve never used oil in my air fryer, and I’ve had it for approximately 2 years.
There are over 200 Delicious and Easy Meal Ideas including Gluten Free and Vegan choices. Isn’t this fantastic?
All of the recipes in this collection require no more than five ingredients (excluding salt, pepper, water and cooking spray), and most can be fully prepared in just 15 to 20 minutes. This is a great cookbook, for anyone, not only those with diabetes. My mother, age 70, has diabetes, so I gave the book to her, and she’s been cooking up a storm. Complete Month Of Meals Collection is simply easy to follow, and a great book. My mother loves it.
The price is great, and the food comes out delicious every time. This hard cover book, will give my mom great recipes, for diabetics, for years to come.
There’s an entire section dedicated to desserts, that diabetics can eat, with no sugar problem. This couldn’t be more special. And, there is a group of drinks, too. The smoothies are my favorite!

I love the new Quick-Fix Dinners Cookbook from Southern Living. It makes dinner time so much more satisfying, because it doesn’t take as long to make it now.
No longer stress at dinner time, now you have recipes, at your fingertips, that take literally 10 – 30 minutes. The Veggie Roll-ups is one of my favorites, and the first that I tried. It took no time at all to get it made, and was delicious.
In QUICK-FIX DINNERS, the editors of Southern Living magazine have streamlined crowd-pleasing Southern classics and modern fare to bring you recipes that take just 10, 20 or 30 minutes to make, (like a 30-minute Cast Iron Chicken Picatta, a 20-minute side of Roasted Broccoli with Orange-Chipotle Butter, and 10-minute Ambrosia Meringue Trifles!).
My husband’s favorite is the Chicken and Wild Rice Salad. He loves rice, so this was great for Joe. Page 171, for this recipe, and it’s delicious as well. It only takes 10 – 12 minutes to cook. Because of the fact, that you use a packet of rice, instead of making it from long grain rice.
Even 6 year old, Jacob, will eat when I use Quick-Fix Dinners. Jacob loves that I have more time to play with him, because dinner doesn’t take quite so long, when I’m cooking from the cook book. He loves the food, too. I do think he loves that I have more time for him, but he actually eats what we put on his plate. Which, he never does, and now it’s habit.
I’ve always loved Southern Living, but now they have given me a new found love for them.

Aquafabulous! By Rebecca Coleman is a fantastic Vegan, Egg Free Cookbook. My 20 year old, Sarah, is hooked on being Vegan. She doesn’t believe in killing animals, therefore, making her Vegan. We have had to cook special meals for her for about 10 years. So, this is now the perfect cookbook for her.
If you are allergic to dairy, or eggs, this is the perfect cookbook for you. You will find that these, over 100 recipes, are egg and dairy free. This makes it perfect for the lactose intolerant, like my sister in law. It’s tough when you have to learn to cook around others intolerances. But, it’s good to know these things, and with this cookbook, I can’t go wrong.
The Coconut French Toast is so delicious. My mother in law loves Coconut, so this was the first recipe we tried. It went over so well, and everyone loved it. The weak stomach, the vegan, etc., they all loved it.
The discovery of aquafaba has blown open the world of vegan baking. Things that were once considered impossible are now possible, and the options are endless. The chemical properties of eggs were thought to be integral to binding and leavening baked foods, and replacing them was a challenge that was difficult for vegan bakers to solve. But aquafaba is the perfect substitution for eggs, as its protein mimics their chemical magic. And since it is neutral in flavor, you don’t need to worry about your dishes tasting beany.

My daughter, age 19, loves making these Gravity Cakes, for the book we just received. With the bright, colorful pictures, it takes barely any effort to make the perfect Gravity Cake every time. We work at them for an hour or so, and whala, perfection.
There are 45 Amazing Cakes to choose from in this book by Jakki Friedman & Francesca Librae. They’ve really made it an easy obsession, to make Gravity Cakes. I’d never even heard of a Gravity Cake, until receiving this book. They are so much fun to make, with my daughter. And, easier than I could’ve ever imagined.
My favorite is “Beach Party”. My soon to be 6 year old loves the beach, so this is perfect for his birthday. Sarah, my daughter, and I have been working hard to get this one down pat, so that Jacob has the perfect Gravity Cake for his birthday. I’m all about freezing it, once it’s fit to perfection. We started it last night, and we said we would finish it today. The instructions couldn’t be clearer, and the colorful pictures help to illustrate exactly what to do. We got this!
Full color throughout, these projects will spark your imagination and provide loads of decorating inspiration. There’s a cake for virtually every event and occasion — from Valentine’s Day to Thanksgiving and from baby reveals to poker parties, and everything in between. Once you’ve mastered the techniques, it will be no time before you’re using your imagination to create your own unique designs.
My daughter told me after we make this cake, for Jacob, the book is becoming hers. So I better get this recipe right, but it won’t be hard with Jakki & Francesca’s step by step directions. You really need to get this book. It’s fabulous.

The Perfect Diabetes Comfort Food Collection is great.
I have my mom, mother in law, father in law, and husband’s aunt, all close to me with Diabetes. So when I was offered to write a post for this wonderful cookbook, I took the offer.
The Perfect Diabetes Comfort Food Collection, is a good book to have, even if you don’t have Diabetes. It’ll help you eat right. And, the foods in the cookbook are easy to make, and are delish.
First, let’s go over some of the recipes in The Perfect Diabetes Comfort Food Collection:
-Chickpea Patties with Mango Chutney
-Fresh Tuna Burgers
-Apple Cider Chicken
-Scallion and Ginger Sauce with Seared Chicken
-No Noodle Zucchini Lasagna

These are all great comfort foods, and are delicious. My daughter, age 19, made a recipe for my mom, and my mom loved it. Here’s the recipe:
SHRIMP AND FRUIT TACOS
Serves: 4 | Serving size: 1 taco
Prep time: 10 minutes | Cook time: 5 minutes
Both mangoes and avocados have the same indicator of ripeness; press the skin on each and it should give just a little. Look for well-rounded mangoes that feel heavy for their size. While most mangoes have a beautiful red and yellow skin color, color isn’t always an indicator of ripeness as some ripe mangoes retain quite a bit of green color on the outside. Better to choose large mangoes that yield a lot of fruit. In addition to pressing on the skin of an avocado, flick off the stem end. Underneath you should find the color green indicating your avocado is ready to eat.
SEASONING MIX
2 teaspoons chipotle chili powder
1/2 teaspoon dried oregano leaves
1/2 teaspoon sweet paprika
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon sea salt
1 1/4 pounds large peeled and deveined shrimp
1 tablespoon olive oil
Juice of 1 lime
8 (6-inch) corn tortillas
1 large mango, peeled and cut into thin slices
1 small avocado, peeled and cut into thin slices
GARNISHES
1 cup shredded romaine lettuce
3 fresh medium tomatoes, cored and diced
1/2 cup nonfat plain yogurt or nonfat sour cream
Combine the ingredients in the seasoning mix and add the shrimp. Toss to coat.
Heat the olive oil in a large skillet. Add the shrimp and sauté for 4–5 minutes until shrimp are cooked through. Sprinkle with lime juice and remove from the heat.
Heat the corn tortillas one at a time in an ungreased skillet for 30 seconds per side.
To serve, add the shrimp to the tortilla and top with mango and avocado. Garnish with lettuce, tomatoes, and yogurt or sour cream.
